SUPER EASY, SUPER DELICIOUS...PERFECT FOR THE 4TH OF JULY! GRILLED VEGETABLES WITH A TOMATO BALSAMICO
This is my favorite summertime side dish, guaranteed to be a crowed pleaser!
For this dish you will need the following:
2 eggplant
2 packages portobello mushrooms
4 squash / zucchini
2 each red, yellow, & green peppers
2 red onions
10 cherry tomatoes
balsamic vinegar
olive oil
fresh basil
dash of salt
Combine equal parts olive oil and balsamic vinegar (around one cup each). Finely chop the basil and slice the cherry tomatoes in half adding both to the mixture or olive oil and balsamic vinegar. Add a dash of salt, cover with a tight lid, shake and put into the refrigerator for at least two hours (overnight is better).
Peel the onion and rinse the other vegetables. Slice the eggplant and red onion in round slices, the squash / zucchini in around 4in lengthwise slices and the red, yellow, & green peppers in quarters remembering to remove all of the seeds. Leave the portobello cap whole as it is easier to grill.
Place the vegetables on a medium heat grill for 8-10 minutes remembering to turn over halfway through. You will be looking for visible grill/char marks but remember not to let them burn.
Remove the vegetables, slice the portobello mushroom and place each vegetable in a row on a serving platter. Take the tomato balsamico, shake it and using a spoon, drizzle it over the the platter of vegetables and serve. You'll have a brilliantly colorful dish is healthy, tastes delicious and is guaranteed to be the talk of your 4th of July picnic!

Driving Shortcuts in LA
As we are all feeling the pinch of a sluggish economy and almost $5.00 a gallon for gas I have decided to offer up some of my favorite shortcuts for navigating your way through LA. Over the weeks to come, look forward to receiving some great shortcuts to help you save both time and money.
This week's shorcuts are:
Century City to Downtown Los Angeles
It's not worth getting on the freeway for this one. By the time you get on the 10 Freeway at Manning, Overland or Robertson, you could have already made a dent in the route by just taking Olympic Blvd.
Century City to Santa Monica
Proceed west on either Olympic Blvd. or Pico and go left at Overland. If you decided to take Pico, you might want to go left before Overland, onto Manning, then left on
Ashby and right on Overland. Once you're proceeding south on Overland, get on the 10 Freeway West. In less then 5 minutes you'll have your choice of Santa Monica
exits. (In general, a courier saves lots of time taking the 10 West whenever they travel from Century City, Westwood, or West Los Angeles.)
Downtown Los Angeles to HollywoodGo west on 8th Street and pass over the Harbor Freeway and make a right on Hoover and another right on to Rampart Blvd, which you will then take to the Hollywood Freeway.
